Strawberry Chia “Healthy” Truffles
These are really simple to make, and very delicious, AND sugar free!
1 cup of almond flour, or blanched almonds ground very fine
1/2 cup of sliced fresh strawberries, packed, about 4 large
1/3 cup pitted dates, any type
1 Tablespoon chia seeds, black or white
1/4 cup chocolate chips and 1-2 drops of vegetable oil
1/4 cup of shredded coconut
2 Tablespoons chia seeds
Or use cocoa powder, icing sugar or anything you like. Method
Place first four ingredients into a food processor and blend 3-4 minutes until pureed.
Refrigerate for an hour or freeze 15 minutes
Roll into small balls and then into the coconut, chia seeds or melted chocolate which has been tempered with a drop or two of vegetable oil.
