Strawberry Chia Healthy “Truffles”

gather your ingredients

Strawberry Chia “Healthy” Truffles

These are really simple to make, and very delicious, AND sugar free!

Ingredients

1 cup of almond flour, or blanched almonds ground very fine

1/2 cup of sliced fresh strawberries, packed, about 4 large

1/3 cup pitted dates, any type

1 Tablespoon chia seeds, black or white

To Finish:

1/4 cup chocolate chips and 1-2 drops of vegetable oil

1/4 cup of shredded coconut

2 Tablespoons chia seeds

Or use cocoa powder, icing sugar or anything you like. Method

Place first four ingredients into a food processor and blend 3-4 minutes until pureed.

Refrigerate for an hour or freeze 15 minutes

Roll into small balls and then into the coconut, chia seeds or melted chocolate which has been tempered with a drop or two of vegetable oil.

process 2 – 3 minutes until pureed

then refrigerate about an hour, or freeze for 15 minutes

melt chocolate chips in the microwave at 50% power

stir until smooth

add a couple of drops of vegetable oil to “temper” the chocolate

form the chilled strawberry chia mixture into small bowls and roll in coconut,

chia seed,

or the melted and tempered chocolate. Yum!!
