Spelt Pizza Dough

My very favourite food is pizza so I set out to make a great spelt pizza crust. This one is a sure thing – tender on the inside, crispy on the outside. It uses a special yeast called Fleischmann’s Pizza Yeast, which is a mixture of yeast, Vitamin C and enzymes. It rises incredibly fast and is perfect for spelt flour. If you can’t find it, just use rapid rise yeast and allow about 1/2 an hour resting period instead of 15 minutes.

Spelt Pizza Dough

Makes an 8-slice pizza – 30 minutes, start to finish

Ingredients

2 cups light spelt flour, divided

2 1/2 teaspoons Fleischmann’s Pizza Yeast

3/4 teaspoon salt

1 1/2 teaspoons sugar

2/3 cup very warm water

1 Tablespoon olive oil

Tomato or pizza sauce

Shredded cheese, such as a mix of mozzarella, parmigiano and asiago

Pizza toppings (your choice), such as mushrooms, peppers, red onion, garlic, goat cheese, olives, etc. etc.

Method

Sift 1 cup flour into a large bowl

Make an indentation and add the yeast, salt and sugar

Mix the olive oil into the very warm water and add all at once to the flour mixture

Sift the remaining cup of spelt flour over the wet mixture and incorporate until you have a shaggy mass

Then using your fingers, make a dough ball

Turn dough ball out onto either a silpat or a piece of parchment paper. Invert the mixing bowl over the dough ball and allow to rest for 15 minutes while you prepare the rest of the ingredients.

Roll dough out onto a parchment lined pizza pan.

Add tomato sauce, cheeses and toppings.

Bake in 425 degrees Fahrenheit oven for 15 minutes or until lightly golden brown.

Serve with a green salad and love, of course.

then use your fingers to create a dough ball

place the dough ball onto your silpat or parchment and invert the bowl over the dough to cover

while the dough is resting, shred the cheeses and slice the vegetables

after about 15 minutes the dough should be doubled in size. *note: 2 batches pictured
